Since many of my friends don't cook at all or would like to cook better, I have made each recipe super easy to follow. Facts are facts, you can make Fast, Fun and Fabulous meals with good nutrition, awesome taste, many in 30 minutes and you can do that a LOT cheaper than fast food.

Fast, Fun and Fabulous Foods cookbook includes Step by Step recipes for the Cooking Challenged.  These are not "recipe card" recipes…these are written out step by step in the order you do things and are so easy to follow anyone can follow them.

I have included over two hundred of my favorite recipes in 12 easy categories which includes; beef & ground beef, breads, cakes & pies, casseroles, cookies & more, eggs & salads, pork, potatoes & rice, poultry, sauces & marinades, and seafood.   Within this selection of recipes you will find recipes from all over the world, like Chinese tea eggs, Spanish sand cookies, Dutch Bubble and Squeak, Russian high tea cakes, Italian tomatoes, Hawaiian Pork Roast, Japanese Tempora Shrimp and more.  There are recipes for the grill, recipes for crock pots and several recipes over 100 years old that have been passed down in my family for generations, like my grandmother's mouth watering cracker crumb crusted "Traveling" chicken she used to pack in the wagon for trips into town.

Each recipe is written out step by step, including how many people the recipe serves, what to add when, short cuts to save dishwashing and time, and step by step ways to make things like restaurant quality Alfredo sauces and gravies. I have included over 40 full color photos of the foods.  Plus EACH recipe has tips, notes on the foods, histories behind the foods, alterations for diabetic or vegetarians, cooking science and sometimes costs for the meal and how and where to buy foods.  In addition to the recipes, there are articles on spices, cookware, gadgets and how to read food labels, kitchen safety and how to sneak in a little extra nutrition.

This recipe collection contains no "hot" foods, no diet recipes, no fancy hard-to-find ingredients, just simple foods prepared in fabulous ways that you will be proud to put on your table.  Many of these main dishes cost less than $6.00 a meal to feed 6.  Fast food can't hold a candle to MY dollar-a-person meals that are busting with that "Oh my GOD!" flavor and packed with good nutrition.  Also I teach you how to garnish the food so it looks like a masterpiece on the table every time!

With each main dish I give you a menu planner (What goes with this?) of what other foods go with that meat so your meals are balanced and what to add with it when you get extra people at your table.  These time-tested recipes make it a breeze to make things like scratch yeast breads, or a chocolate cake in just FIVE MINUTES or things like Irish potato skins smothered with bacon and cheese for Super Bowl parties; make them up in 25 minutes flat!

Also included are several holiday recipes like how to cook a juicy turkey start to finish, how to make a shrimp Christmas tree that will be the crowning glory on your holiday table and awe your guests, how make sinfully delicious cakes and pies and how to make delicate deviled eggs that look like stained glass windows.  Plus there are recipes that kids can make and click and go links to the Internet for more information.   

These recipes are easy to use, just pick what you want to make by clicking on the category, click to open that recipe and read it and look at the picture.  If you want to make it, just print it out and take it to the kitchen.  If you spill gravy on it – throw it away – you still have the recipe! Sample Recipe:

Sweet & Savory Country Ribs

Serves 6

 

Ribs

 

3 to 4 pounds of lean country ribs

1 bottle of Teriyaki Baste and Glaze

3 green onions cut into 1 inch strips

1/3 of one bell pepper cut into thin 1 inch strips

½ of 1 small onion slivered

1 jar of pimentos (drained)

Garlic salt

Lemon pepper

Oil

Nonstick cook spray

PREHEAT oven to 350 degrees.

PREP 1:

Coat an 11 X 14" pan (I use Pyrex) with nonstick spray and set aside. 

PREP 2:

Wash ribs in hot water rubbing the bone cuts to remove any bone spurs.  Lay out on cutting board and season both sides lightly with garlic salt and lemon pepper.  Lay ribs single file into prepared baking dish.

DRIZZLE ribs with ¼ cup Teriyaki Baste and Glaze.  Cover pan top with foil and seal tightly.

BAKE for 1 hour 15 minutes.  Test ribs for doneness with a fork – extra thick ribs may need an extra half hour.

PREP 3:

Meanwhile, add a small pool of oil to a sauce pan and put over medium heat.  Add in onions, green onions and peppers season lightly with garlic salt and lemon pepper.  Cook until onions and peppers are soft but slightly crisp.  Spoon veggies out of oil draining off as much oil as you can and put into a small bowl. Stir in pimentos. Pour the rest of the bottle of Teriyaki Baste and Glaze – about one cup – over veggies and stir well.

REMOVE ribs from oven and drain off pork fat or transfer to serving dish.  Spoon sweet and savory glazed veggies over ribs. 

SERVE hot with extra baste and glaze.

NOTES:  This is a flavorful and easy way to make some killer ribs.  These are gorgeous on the table and sweet and tangy on the tongue.  Also by draining off the fat they are pretty lean too.  Find Teriyaki Baste and Glaze in the oriental section of your grocery store.

GRILLERS: You can cook these in the oven for an hour and then toss them on the grill for 30 minutes on low heat to give then an awesome smoky taste. Then transfer them back into your pan and douse with the veggie glaze.  I don't recommend glazing them on the grill – this sauce is thick and sweet and it burns in a flash.

 What to serve with them?  I like to serve Rice Pilaf (recipe in Potatoes & Rice) with these ribs and a veggie like English peas, green bean or buttered carrots.  Apple cinnamon muffins go great too.  See recipe in the Bread section.
